Taco soup is one of my staple meals during the winter. I love how quick it is in my Instant Pot and that everyone in my family will eat it without any whining; I call that a major win! This taco soup recipe is packed with delicious flavors and healthy ingredients. Add this recipe to your menu this week and it is sure to be a hit with the whole family!

Ingredients

  • Ground Hamburger
  • Corn
  • Chili Beans
  • Black Beans
  • Tomato Juice
  • Onions
  • Green Peppers
  • Garlic
  • Taco Seasoning
  • Pepper
  • Bay leaf

How To Make Taco Soup

  1. Brown the ground hamburger meat in the Instant Pot.
  2. Add onions, green peppers, and garlic and allow it to sauté for 2 minutes.
  3. Pour chili beans, black beans (rinsed), corn, and tomato juice into your pot.
  4. Season with pepper, bay leaf, and taco seasoning and stir it all up.
  5. Set your Instant Pot for 30 minutes and carefully do a quick release once it is finished counting down.
  6. Ladle out bowls of soup for your whole family and ENJOY the perfect taco soup!

  • Instant Pot

Ingredients

  • 1 Pound Ground Hamburger

  • 1/2 Cup Diced Green Peppers I used frozen
  • 1 tbsp Minced Garlic
  • 1 Bay leaf
  • 1/2 tsp Ground Pepper
  • 1/4 Cup Taco Seasoning
  • 1 Can Chili Beans
  • 1 Can Black Beans drained and rinsed
  • 1 Can Corn
  • 32 Ounces Tomato Juice

Notes

I normally make a double recipe of this soup for my family of 7. We have enough for two dinners and maybe a couple children’s lunches. 

Serve it with

This soup is perfect with sprinkled shredded cheese, tortilla chips, and a little sour cream. Or if you prefer your soup a little more simple serve it with chips and salsa on the side.

Prefer a Crockpot??

This recipe works wonderfully in a crockpot as well. Brown your meat, onions, green peppers, and garlic on the stovetop and then pour it into your crockpot. Add all additional ingredients to your crockpot and turn it on high for 4-6 hours or on low for 8 hours.
